Pie Day

First off, please take a minute to say a little prayer for all of the students (and mommas) returning to school today. My daughter starts2nd grade this morning and I know we'll miss her terribly!!

On Saturday I fixed the most delicious tomato and spinach pie. My father-in-law recently brought over a few of his homegrown red and yellow tomatoes and I knew right away I'd be fixing this recipe. I had fixed it before and we (me and the hubs) both LOVED it. Not only is it gorgeous in appearance but it's surprisingly filling. So flavorful! I highly suggest trying it!

The only bad part is that I forgot to take a picture before we cut into it!! Bummer. 

**Also, I did not fix the crust from scratch. The store brought tasted just fine to us! :)






And for some reason while this pie was baking, I had the idea to fix a peanut butter pie. I had all of the ingredients on hand except the crust. I typically fix it with a store bought oreo crust but didn't have any oreos. And as I was about to start crushing graham crackers, I remembered I had some smores oreos. So that's what I used. This pie is supposed to stay frozen, but needless to say we couldn't wait for it to freeze for our first piece. And it was just as good!! YUM!! But it is VERY rich.

I can't seem to get enough fresh tomatoes this Summer and obviously you know about my passion for chocolate/peanut butter! :)

  4. When I think of pie I usually think of dessert but I love the idea of the dinner pie! It looks amazing!
