Happy Monday! I hope y'all had a great weekend! We had lots of fun things planned but between the rainy weather and my son having a cold, we ended up being (somewhat) lazy.
On Friday morning when I realized we wouldn't be able to do our original (outdoor) plans on Saturday, I wanted to plan something else "Christmasy" for us to do. I looked online and ended up buying us tickets to see the Virginia Christmas Spectacular event at a local church in the next town over.
So once Cate came home from school, we all got dressed and ready to leave. I really wanted to snap a pic of us in hopes of using in our annual family Christmas ornament for this year, but the pic didn't turn out as good as I had hoped. Gotta love fake smiles - it's real life, y'all! But kudos for my hubs for looking excited! :) (*Oh, and Cate is standing on a stool b/c she didn't want to be held but we needed to all be somewhat close to frame the pic.)
Despite the show being 90 minutes long and not even starting until 7pm, the kids did really well. I was pleasantly surprised. William started to get restless at the end, so we left with one song still to be performed. But it actually worked out great b/c it saved us a ton of time not dealing with traffic.
We woke up Saturday morning to find Frosty, our elf, with two new Christmas movies for the kids. It was perfect b/c they were both tired and fighting colds.
Sunday after church, Cate and I headed to our friend's annual Gingerbread party. Thankfully it is in our neighborhood so we didn't have to travel far. And poor William had to miss again this year b/c his cold had gotten worse. :( And while I missed the boys, it was nice to have some girl time.
I wanted to let y'all know that I finally received my Black Friday purchase, these awesome booties! I love the color, the tassel, and of course the comfort! I am so pleased with my purchase!
And finally, I wanted to post a recipe that I fixed Saturday night. After the kids went down, the hubs and I watched some football and we love having apps to eat. I fixed sausage wontons. I know there are various versions of the recipe, but this is just our favorite. They are seriously SO GOOD! They recipe says to make them in a mini muffin tin, and I've done it that way too. I just prefer the bigger ones. Oh so good! You won't be disappointed!
Sausage & Cheese Wonton Appetizers
1 Package Wonton Wrappers
1 Pound Pork Sausage (I use the hot Jimmy Dean sausage)
1 Cups Shredded Cheddar Cheese

1 Cups Shredded Cheddar Cheese
1 cup Monterey Jack Shredded cheese
1/2 Cup Ranch Dressing
1/2 Cup Ranch Dressing
Heat oven to 350 degrees.
Lightly grease a muffin pan. Place one wonton wrapper in each muffin
cup lightly pressing it onto the bottom and sides of the pan. Bake for 5
minutes or until edges are slightly browned.
In a large skillet cook sausage until no longer pink. Drain any excess grease. In a bowl mix sausage,
cheese and ranch dressing. Place a spoonful of filling into
each wonton cup inside the muffin pan. Bake for 10minutes or until
heated through.
Some day I'd like to go to that show. Remember - I've grown up hearing about all of that. Also, I've actually fixed those wontons before.
